My Nana was the person who gave me my love of cooking. My mom would drop us off at her house in the morning before work along with the ingredients for that nights meal. After work she would pick us and the prepared meal up and go home for dinner. During those days nana would make chocolate chip cookies, but not just any cookie. She used bacon grease instead of butter. They had a unique savory taste and just thinking about the smell of them cooking in the oven brings a smile. You might think this is just a trend because bacon is big right now but it’s not. People have done this for many years. During the depression many home cooks would save the bacon grease and use it in everything.
You can use the same recipe on the back of your chocolate chips and just substitute half of the butter with bacon grease. When cooking bacon just reserve your grease in jar. Be sure to strain it if you have any bits in it. You can store it in your fridge and add to it each time you cook bacon.
